BBQ Chicken Chopped Salad
A bagged salad, leftover rotisserie chicken and a few other simple ingredients makes this lunch come together in no time.…

School is back in session which means quick, healthy lunches are essential. If you are packing lunches for your kids and the adults in your family you know it can take forever and sometimes you run out of creative ideas to pack. Today’s BBQ Chicken Chopped Salad is really easy to make and is packed with healthy ingredients that tastes great together.
You might have noticed in the stores that they now sell bagged salads that are made into kits. Today’s recipe uses the Earthbound Farm® Organic BBQ Ranch Chopped Salad Kit as the base of the salad and then layers the rotisserie chicken, avocado, cheese, chickpeas, bell peppers and hard boiled eggs on top. Pack the salad dressing on the side and pour a small amount on top of the salad, put the lid back on the mason jar and shake the dressing into the salad.
Today’s BBQ Chicken Chopped Salad is created in partnership with Produce for Kids who has joined forces with Meijer and Jump with Jill this fall to raise funds to bring the Jump with Jill nutrition education program to local schools in the Meijer area.
