Slice the cucumber into 1/2 inch thin rounds and lay them out on serving platters. Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice.

  2. 2

Top with the cherry tomato half, crumbled feta cheese and the freshly chopped parsley.

  3. 3

Serve chilled or store in an airtight container before serving.

Notes

Store leftover cucumber hummus bites in an airtight container in the fridge for up to 2 days. They're best enjoyed the day they're made, since the cucumbers will soften and release more moisture the longer they sit with the hummus on top. Preventing sogginess: Pat the cucumber slices dry with a paper towel right after slicing, before adding the hummus. This removes surface moisture so the bites hold up better on the platter. Vegetable swaps: These are great with a variety of vegetables. Try matchstick carrots or thinly sliced red onion in place of or alongside the cucumber. Hummus options: A variety of hummus flavors work well here, including Lemon Twist, Roasted Pine Nut, or Rosemary Sea Salt. Lebanese-leaning variation: Swap the roasted red pepper hummus for my Lebanese Hummus and finish each bite with a light sprinkle of za'atar or sumac instead of parsley for a more traditional flavor. Feta: Feel free to leave the feta cheese off if you don't like it, or swap in goat cheese.
