Mediterranean Vegetable Sandwich

My favorite Mediterranean Vegetable Sandwich is loaded with hummus and feta cheese, fresh vegetables and topped with sprouts. You won't miss the meat with this sandwich.

Method

  1. 1

Place the four slices of bread on a large cutting board and spread a layer of hummus one one side of each slice of bread.

  2. 2

Sprinkle the crumbled feta on one half of each sandwich then top with matchstick carrots, tomatoes, cucumbers and finally the sprouts. Place the other half of the bread on the sandwich, cut in half and serve.

Notes

This sandwich is best made fresh, just before you plan to eat it. It makes a great lunch on the go, as the layer of hummus on each slice of bread does stop the wetter ingredients making the bread soggy. If you don’t want to use sliced bread, this recipe would work just as well in a pita, corn or wheat tortilla, or any other flatbread.
