Balsamic Roasted Mushrooms

Method

  1. 1

    Preheat the oven to 400°F.

  2. 2

Wash and clean the mushrooms of all of the dirt and dry with a paper towel. Put the mushrooms in a large mixing bowl. Add the garlic and shallots to the mushrooms and mix well.

  3. 3

In a medium mixing bowl add the butter, olive oil, thyme, oregano, balsamic vinegar, soy sauce, brown sugar, salt and pepper and mix well.

  4. 4

Add the sauce into the mushrooms and mix well. Spread the mushrooms on a non-stick baking sheet evenly.

  5. 5

Roast in the oven for 15 minutes, stirring halfway through until the mushrooms are tender. Remove from the oven and sprinkle the fresh thyme and parsley on the mushrooms. Serve warm.

Notes

Rinse mushrooms quickly under running water and dry them thoroughly with a paper towel. Too much excess moisture when you clean mushrooms will make them steam instead roast. I like to use cremini mushrooms, white button mushrooms, baby bellas, portobello oyster mushrooms or shiitake, and oyster mushrooms. If you are using larger mushrooms like portobellos they should be sliced for even cooking when making mushrooms recipe. Store the leftover mushrooms in an airtight container for up to 4 days. To reheat you can heat in a skillet or the oven.
