Tomato Salad with Capers (Briny, Creamy, and Done in 10 Minutes)

This tomato salad with capers comes together in 10 minutes and skips the soggy-salad problem entirely. A sumac-lemon dressing, crumbled feta, and fresh mint make this one genuinely worth making, not just another basic tomato salad.

Notes

Store in an airtight container for up to 2 days. Drain any excess liquid before serving and add a fresh drizzle of olive oil. For best results, dress just before serving and keep extra dressing on the side. You can make this salad using cherry tomatoes or any variety of tomato you like. This salad is customizable to what you have on hand. Some other ingredients that are nice in this salad are artichokes, roasted red peppers, cucumber or bell pepeprs.
