Falafel Waffles

Falafel Waffles are the perfect Mediterranean breakfast to start your day! Many of the traditional ingredients you find in a waffle are added to chickpeas, parsley, garlic and warm spices to create the perfect falafel style waffle. Top it with a fresh Lebanese style salad and a drizzle of a tahini sauce.

Method

  1. 1

Combine the chickpeas, onion, cumin, coriander, paprika, cayenne pepper, salt, black pepper, lemon juice, all-purpose flour, fresh parsley, baking powder, garlic cloves, egg whites and olive oil in a food processor or blender.

  2. 2

Spray the waffle iron with non-stick spray. Preheat the waffle iron. Fill the waffle iron about three-quarters of the way full and close the lid.

  3. 3

Cook until the falafel is golden brown and firm in the center, about 7-9 minutes.

  4. 4

Serve with the Lebanese salad and tahini sauce.

  5. 5

Mix all of the ingredients for the salad in a medium bowl and mix well.

  6. 6

In a medium mixing bowl or a mason jar combine all ingredients and stir well until combined. Add more water for a thinner consistency. Taste and adjust seasoning.

Notes

Storage: You can store these in the fridge for up to 4 days or you can freeze them in a sealed container. Reheating: When reheating I like to either use a toaster or an air fryer to get them crispy again. Spray Waffle Iron: These can stick to the waffle iron. Make sure to spray it with non-stick cooking spray before using. Change up Spices: The spices I used are often use in Mediterranean recipes but you can mix them up. Add Cheese: You could add feta cheese to the finished waffles or add some to the batter if you want.
