Method

  1. 1

In a large pot heat the olive oil over medium high heat. Add the onion, bell pepper, yellow bell pepper, garlic, sausage, 2 teaspoons Cajun seasoning and 1 teaspoon old bay.

  2. 2

Sauté for about 8 minutes, until the sausage is browned and the peppers and onion are soft.

  3. 3

Add the remaining 1 teaspoon Cajun seasoning, fire roasted tomatoes, tomato paste, chicken broth, 1/4 cup cream, 8 oz. penne pasta and bring to a boil.

  4. 4

Cover and turn down heat to medium low and simmer for 13-15 minutes or until the pasta is cooked.

  5. 5

Stir in the freshly chopped parsley and salt and pepper to taste.

  6. 6

Serve warm with crusty bread to soak up all those good juices!

Notes

You can use any color bell pepper you would like. Add a jalapeño for even more spice. You can use regular diced tomatoes if you want. I like the fire roasted for the extra flavor. Use any pasta you would like. I tend to think penne and rigatoni work best.
