Roasted Vegetable Goat Cheese Flatbread Pizza Recipe

Method

  1. 1

Preheat the oven to 350 degrees F.

  2. 2

Put the bell pepper, carrots and brussels sprouts in a large mixing bowl with the olive oil. Toss to combine.

  3. 3

Add the 1 tsp. Italian seasoning, salt and pepper and mix well. Spread the vegetables on a non-stick baking sheet.

  4. 4

Roast in the oven for 20 minutes or until the brussels sprouts are tender, stirring half way through.

  5. 5

Lay the flatbreads on a large cutting board. Spread the pesto sauce on each flatbread in a thin layer.

  6. 6

Once the vegetables are done roasting divide them up evenly on each flatbread. Sprinkle the goat cheese evenly on each flatbread.

  7. 7

Bake in the oven for 5 to 10 minutes or until the goat cheese starts to get soft and warm. Remove from the oven and drizzle balsamic glaze on the flatbread along with fresh parsley, dill or basil.

Notes

Store the leftover flatbread in an airtight container for up to 3 days. To reheat I like to heat it in the air fryer or oven.
