Method

  1. 1

Season chicken thighs with salt, pepper and the cornstarch.

  2. 2

Heat a medium non-stick skillet on medium heat. Sear chicken thighs on both sides for 5 minutes, until there is no pink in the middle.

  3. 3

In a medium bowl whisk together the sesame oil, garlic, ginger, chili flakes, water, sriracha, soy sauce, honey and rice vinegar.

  4. 4

Pour the sauce in the skillet, turning the chicken in the sauce until coated. Simmer the sauce with the chicken for 2-3 minutes.

  5. 5

Once the chicken reaches an internal temperature of 165 degrees F remove from the skillet and serve with fresh cilantro, sesame seeds and rice.

Notes

Storage: Store in the refrigerator in an airtight container for up to 5 days. Freeze: Allow the chicken to cool down and freeze in an airtight container for up to 1 month. Crispy Chicken: The cornstarch helps create a crispy skin on the chicken and also thickens the sauce as it simmers. You can skip it if you prefer, but the sauce won't coat the chicken quite as well. Reheat: Warm in a skillet over medium-low heat, taking care not to overcook the chicken or it can dry out. Boneless Option: If using boneless chicken thighs, they'll cook slightly faster, so start checking for doneness a minute or two early.
