How to Cook Pork Loin in the Slow Cooker

Method

  1. 1

Trim the fat from the pork loin.

  2. 2

In a small bowl combine 1 Tablespoon olive oil, garlic, brown sugar, paprika, cumin, onion powder, oregano, cayenne pepper, chili pepper, salt and pepper.

  3. 3

Use your hands or a brush to rub the mixture over the entire pork loin.

  4. 4

OPTIONAL: In a large cast iron or non-stick skillet heat the other 1 Tablespoon olive oil over medium-high heat. Brown the pork loin on all sides.

  5. 5

Transfer the pork loin into the slow cooker.

  6. 6

Pour the broth into the slow cooker.

  7. 7

Cook on low for 4 to 5 hours. The pork should reach an internal temperature of 145 degrees F. You want a slight blush of pink. Let sit for 3 minutes.

  8. 8

Slice the pork and serve it with your favorite sides or you can use two forks to shred the pork and use for sandwiches, rice bowls or other dishes.

Notes

You can skip the step where you sear the pork in a skillet. It does help dvelop the flavor so I highly suggest doing it. You can use your favorite rub for this recipe. You will see I created one with spices I enjoy but you can use anything you have on hand or come up with your own.
