Method

  1. 1

Place pork roast pieces into a large ziplock bag.In a mixing bowl, combine the Goya Marinade or the orange juice, lime juice, and zest, with the olive oil, onion, garlic, oregano, cumin, bay leaves, salt and pepper.

  2. 2

Pour marinade over the roast and seal the ziplock bag and gently shake the marinade around the entire meat.

  3. 3

If you are planning on cooking the meat right away, allow it to sit on the counter and marinate in the sealed bag for at least 1 hour. It is best to place in the refrigerator and marinade overnight.

  4. 4

Pour meat and marinade into the instant pot. Seal the lid and set on meat for 60 minutes.

  5. 5

When the timer goes off, allow it to rest and slow release for 30 minutes. This will help the meat stay moist and tender. Remove the meat and shred, removing any fatty pieces.

  6. 6

Remove a cup or more of the juice and serve it over the meat. Serve over Cuban yellow rice or in tacos, or with your favorite vegetable side dish.
