Method

  1. 1

Preheat the oven to 350 degrees F. In a small mixing bowl mix together the room temperature butter and minced garlic.

  2. 2

Lay our sourdough bread out on a cutting board. Spread a thin layer of the garlic butter on each piece of bread. Sprinkle za'atar on top of the butter {optional}. Toast the bread in the oven for 5-8 minutes, until toasted and slightly crispy.

  3. 3

While the toast bakes add the feta cheese, Greek yogurt, olive oil, garlic and lemon juice to a mixer and mix on medium for 3-4 minutes until whipped. You also could add the ingredients to a small bowl and stir until creamy and smooth.

  4. 4

Remove the toast from the oven and spread the whipped feta on each piece of toast.

  5. 5

Add the heirloom tomatoes on top of the whipped feta. Sprinkle the fresh basil, parsley and more za'atar {optional}. Serve immediately.

Notes

If you are just making this toast for two people you can easily cut the recipe in half. Another great option is to use crumbled goat cheese and make a whipped goat cheese in place of the feta. Any variety of tomato works great- I do love heirlooms for their flavor and how juicy they are. They work great on toast.
