Cast Iron Mediterranean Pizza

Method

  1. 1

Let the pizza dough come to room temperature.

  2. 2

Preheat the oven to 500 degrees.

  3. 3

On a floured cutting board use a rolling pin and roll the dough so it is the size of the skillet.

  4. 4

If you didn't preheat the skillet you will add the 3 tbsps. olive oil onto a cast iron skillet now and turn the skillet until the olive oil covers the whole skillet.

  5. 5

Take the dough and place in the skillet. Use your hands to press the dough into the skillet until it fits. Spread the red pepper sauce over the dough. Top with roasted red peppers, mozzarella cheese, the feta cheese and the oregano.

  6. 6

Bake the pizza for 20-25 minutes or until the dough is starting to brown and the bottom of the pizza lifts from the skillet with a spatula.

  7. 7

Remove from the oven and let cool for 5 minutes. Garnish with microgreens or arugula, fresh parsley and crushed red pepper.

Notes

Preheating the skillet ensures a crispy crust. If you like a crispy crust you can add the skillet to the 500 degrees oven and let it heat for 5 minutes. Remove the skillet and carefully add the olive oil and then add the dough. From here you will bake the pizza. Always use pot holders when handling the skillet as it will be very hot. When stretching your dough if it isn't stretching to the circle of the skillet let it sit for 5 minutes and continue to stretch it to fit the skillet. You can use a traditional pizza sauce in the place of the red pepper spread or try hummus or a white bean spread.
