Easy Date Granola Bars

Method

  1. 1

Line an 8x8 baking pan with parchment paper in the bottom and the edges. Spray baking oil on the paper.

  2. 2

Add date paste and honey in a microwave safe bowl. Melt on low medium heat for some seconds. Remove and stir in oil and vanilla extract.

  3. 3

In a large mixing bowl, combine oats, apricots, mixed nuts, coconut chips, cranberries, mixed seeds and salt.

  4. 4

Pour date mixture into the bowl. Mix with a spatula. Make sure everything is moistened. Transfer the mixture into the baking pan. Press an even layer with the spatula.

  5. 5

Place the bars in the refrigerator to set. Leave at least 3 hours or overnight. Remove and cut with a sharp knife.

  6. 6

Store in an airtight container in the refrigerator for up to a week or in the freeze for up to 2 months.

Notes

The combination of date paste, along with the coconut oil and honey, help bind these no bake granola bars together, ensuring they stick together once set in the refrigerator. If you can't find date paste in your stores you can buy it online or you can make your own here or if you don't want to use date paste you can use 1/2 cup of honey for every 2/3 cup of date paste. Store these bars in an airtight container in the fridge for up to a week. You can also freeze them for up to two months. Remove them from the freezer about 30 minutes before you are ready to eat them. Wrap individually for grab-and-go convenience.
