Method

  1. 1

If you are massaging the kale place the kale in a large mixing bowl. Pour the 2 Tablespoons olive oil over the kale and use your hands to massage the oil into the kale for 3 to 4 minutes, or until the kale is soft.

  2. 2

Add the dried cranberries, pecans and goat cheese to the salad and light toss.

  3. 3

In a small bowl mix together the apple and lemon juice {to help keep the apple from browning}. Add the apple to the salad.

  4. 4

In a mason jar or salad dressing container add the olive oil, red wine vinegar, honey, salt and pepper and mix well.

  5. 5

Pour the dressing over the salad and lightly toss.

  6. 6

Transfer to a serving bowl and enjoy!

Notes

Make-Ahead Tip: If you aren't eating the salad right away, wait to add the apple and the dressing until you're ready to eat so the apple doesn't brown and the kale doesn't get soggy. Massaging the Kale: Use the 2 tablespoons of olive oil to massage the kale for 3 to 4 minutes before adding the other ingredients; this softens the texture and mellows the flavor. Nut Swap: Walnuts or almonds work well in place of pecans. Cheese Swap: Feta, parmesan, or sharp white cheddar can be used instead of goat cheese.
